Hello Autumn!!!

Finally summer is over. I have never been so happy to see the end of a season as I am to see the end of summer this year.

I have never been a big fan of our hot hot summers here in Sydney, but when I am pregnant (in particular nearing the end of a pregnancy) I hate, hate, hate summer.

  • I’m really looking forward to being able to walk to and from school without dripping with sweat.
  • I’m looking froward to being able to take the kids back to the park without them getting 3rd degree burns from the swings and slide.
  • I’m looking forward to being able to take the kids out to farms and zoos and not have to limit ourselves to indoor air conditoned buildings.
  • I’m looking forward to spending more time in my backyard, in particular spending more time in my vegetable garden.

It’s time to do a happy dance for the first day of Autumn :)

Tasty Thursday – Crunchy Nut Chicken

Trista over at The Pumkin Patch has started up a new blog carnival… and you know how much I love blog carnivals, so I couldn’t resist joining in.

So here we go, this is a tried and true recipe that my family love.

Crunchy Nut Chicken
.
1 kg flattened skinless chicken breasts or tenderloins
1 cup corn flake crumbs or crush your own corn flakes
1 cup breadcrumbs
1/3 cup finely chopped macadamia nuts
½ level teaspoons chicken stock powder
1 egg white
¼ cup skim milk (full fat milk is ok if you arn’t watching your weight)

Place corn flakes in a plastic bag and crush finely using a rolling pin.
Add nuts and stock powder and shake to combine. Tip on to a plate.
Beat the egg white and milk with a fork.
Dip flattened breasts in egg and milk mixture, then coat with crumbs.
Place on a flat tray that has been coated with cooking spray.
Spray over the top of chicken and bake in a moderate oven for 25-30 minutes or until cooked and golden brown or fry if you arn’t worried about the fat content ;)

Slow Cooking Thursday – Crockpot Apricot Chicken

Here’s another recipe I would like to try:

Crockpot Apricot Chicken
.
500g chicken breasts, diced
2 x 440ml tin apricot nectar
1 packet of french onion soup
1 cup frozen vegetables
1 onion, chopped
.
Put everything into the slow cooker and stir so it is well mixed. Cook on low heat for about 6 hours.

Getting Ready For Tomorrow – Round Up

I’m quite happy with my achievements during February. My plan to get things ready for tomorrow has been a great help to make our mornings less chaotic and more peaceful.
.
Each night I make sure that:
  • All our clothes are organised for the following day, including underwear and shoes.
  • I have made all the lunches and packed the lunchboxes
  • The girls have everything they need to take to school the following day.
  • I have checked the calender..
It means that in the morning we can have breakfast together, get dressed and ready to be out the door in an hour, even less if we need to.

Works for me Wednesday

I’m starting to see a bit of a theme happening with my WFMW’s…… they are all about laundry!!! I wonder if it has anything to do with the fact that I am always doing laundry??? LMAO!!!

Anyway this weeks thing that works for me is to hang the washing straight from the washing machine on to coat hangers. Then I hang it straight onto the clothes line on the hangers. We hang just about everything in wardrobes because we don’t have much drawer space so this works for us. I have a clothes rack in the laundry which I use to put the clothes once I have hung them, then I carry them out to the line. It makes it easy to bring things in when they are dry to, and very quick to get off the line when we have a sudden rain shower. It also means that I don’t have to put things straight away if I don’t have time, I just leave them hanging on the rack in the laundry. It’s great during the hot summer months when the last thing you want to be doing is standing in the hot sun hanging clothes on the line.

Read To Me – Our First Week

Our first week of the Read to Me Mission has gone well.

We have all enjoyed spending time reading to each other. I was surprised at just how much my 2 eldest girls have enjoyed being the story teller. They also like to pick the stories they read.
Each night after dinner we all climb onto my bed and make ourselves comfortable. Either Clare or Chloe begins by reading a book or a couple of chapters from a book to us all. Then I finish by reading a couple stories to everyone. It has been really great, it’s also a good way to get the kids to wind down ready for bed :)

Eight Reasons Why Menu Planning Is A Terrible Idea

Have you heard about meal planning lately? Families are busy and getting busier all the time. As families work on getting organized, many home managers are turning to meal planning as a way to eliminate the evening stress in their homes. However, meal planning is not for everyone.

Here are eight reasons why meal planning just may be a terrible idea for you and your family.
.

  • 1. You enjoy eating unhealthy fast-food three to five times per week.
  • 2. You love the taste of pre-packaged preservative packed frozen convenience food.
  • 3. Spending $200 and 2 hours at the grocery store, only to come home to discover that there is nothing to cook for dinner is one of your favorite things to do.
  • 4. You enjoy the stress of running around like crazy at dinner time trying to figure out what to cook while your children and husband are hungry and crabby.
  • 5. You like your food rut of spaghetti, hot dogs, pizza, repeat.
  • 6. You have no other way to spend the extra $100 you spend each week eating out.
  • 7. You have nothing better to do at 5 o’clock every day then to go to the grocery store. It’s enjoyable to daily spend extra money on groceries as additional items “fall” into your cart.
  • 8. You have no desire to enjoy a home cooked meal around the dinner table with your family. You feel spending time with your family is a complete waste of time.

If you agree with the above statements please do not ever try meal planning – it is probably a terrible idea. On the other hand, if you possibly disagree with at least one of the above statements perhaps it is time to give menu planning a try!

Menu Plan Monday

I’ve had the flu since last Thursday and a serious lack of energy, so I sent my DH out to get some groceries on the weekend. I hadn’t worked out this weeks menu plan yet so just wrote him a list of the basics. So this week I am basing my meals on whats in the freezer and pantry rather than planning what to buy :)

Monday – Easy Spaghetti Bolognese and Salad
Tuesday –
Crunchy Nut Chicken, Oriental Rice & Vegetables
Wednesday –
Crockpot Barbecued Chicken, Mashed Potato & Vegetables
Thursday –
Crumbed Fish, Creamy Pasta with Mushrooms & Bacon & Vegetables
Friday – Hamburgers
Saturday –
Pasta Bake and Garlic Bread
Sunday – Dinner at Mum and Dads :)

Creating a Calm Morning

Are your mornings chaotic and disorganized?
Then it’s time to take control and make your mornings the beginning of a wonderful day!
When your morning routine runs smoothly, and you’re out the door on time it can make your whole day feel better.

.
To create a calm morning routine, follow these steps:

.
Start your morning the night before!

  • .A big time saver in the mornings is to prepare as much as you can the night before. This means choosing the day’s clothing, you can go as far as to pick out the accessories you want to match your outfit, that way you won’t find yourself searching for that pair of earrings at the last minute. Make sure you find any shoes you will need. How many times have your children announced 2 minutes before you are due to leave that they can’t find their shoes???
  • Pack lunches and leave them in the fridge overnight.
  • Make sure your children have everything they need for school packed in their bags before they go to bed.
  • Sign any permission slips that are needed for the following day and
  • Set the table for breakfast.

Use a Calendar!

Buy a wall calendar and hang it in a central location.
Write down activities and appointments for all the family and get in the habit of checking your calender each night before you go to bed and again in the morning. Keep the calendar up to date and you’ll be more organized!

Create a check list for you and your children!

List everything that you and your children need to take with you each day.
Your school aged childrens checklist should include:

  • lunch box
  • hat
  • homework
  • books
  • pencil case and anything else they may need on any given day.

Encourage your kids to check their checklist each morning.

Follow these 3 steps and I guarantee your mornings will run smoother and you will start your day calmer.
