Slow Cooking Thursday - Barbecued Chicken

I’ve found another blog carnival to be part of… I’m loving this, sometimes I struggle with things to blog about, but now I have all these fun exciting things to blog about each day :)

Here is my first contribution to Slow Cooking Thursday:


Crockpot Barbecued Chicken

1kg chicken (breast or thighs - cut breasts in half, leave thighs whole).
1 can condensed tomato soup
1 onion, chopped
1/4 cup vinegar
3 Tabs brown sugar
1 Tab Worchestershire sauce
1/2 tea salt
1/4 tea basil
1/4 tea thyme

Place chicken in a crockpot (slow cooker).
Scatter the onions over the chicken.
Combine all other ingredients and pour over the chicken.
Cover tightly and cook on low for 6 to 8 hours.

Serves 4.

Pregnancy Update

Thanks Mari for asking about how my baby was going.

We are both doing well :) I’m now 28 1/2 weeks pregnant. The heat has been effecting me lately, we are in the hottest part of summer here in Australia and my poor air conditioner has been struggling to keep us cool. Today is overcast though and much cooler, thank goodness :)

I’ve been feeling lots of movement, lots of kicks, punches and body rolls as well as the occassional braxton hick.
I’m counting down the days until I get to the 30 week mark, it seems like an eternity from 20 to 30 weeks but I know that the weeks from 30 to 40 will seem even longer :)

Caitie’s Second Day of Big School

Here’s a photo of my 3 big girls :)
Caitie had a great day yesterday, she said that big school was lots of fun.
Chloe and Clare went and got her at recess and lunch and took her around the playground, so she thought that was great.
She was excited again this morning and couldn’t wait to get into her classroom to play. I noticed this morning that there are quite a few kids in her class that she knows from preschool and from dancing so she has lots of little friends :)
It has been very quiet around here with just Riley and I but it has been lovely :)
The girls started back at dancing yesterday as well. Chloe was the only one doing dancing this year, Clare and Caitie had decided to do Gymnastics instead, but they both decided that they would like to do ballet aswell. So now Caitie is doing ballet and gymnastics, Clare is doing ballet and gymnastics and there is talk of her wanting to do tap as well, but we’ll see if she has changed her mind by next week. And Chloe is doing Ballet, Tap and Gymnastics. It sounds like a lot but it works out really well. I take all the kids to ballet and we sit through that class, then I leave Chloe at dancing to wait for her tap class. I bring the kids home (we only live around the corner) and start cooking dinner (or continue cooking dinner if I’m using the crockpot). Rob usually gets home not long after and I go back and pick up Chloe. Then gymnastics is on a Saturday morning, it only goes for an hour, so either Rob or I can take them there. I had to be a little more cautious this year when it came to organising sports because I’ll be dragging a baby around with me in a couple of months.

Works for me Wednesday

First up I have to say a huge thank you to Shannon over at Rocks In My Dryer for her tip last week of putting DVDs in a CD Folder. I had never thought to do this. But I am very happy to announce that I ran out and bought a CD folder. My kids had a great time collecting all the DVDs throughout the house, taking the DVDs out and putting them into the folder. Not only do I no longer have DVD cases scattered on the floor, no longer do I have to search for a cover when I need to put a DVD away, no longer do I have to help an irate toddler find the Blue’s Clues DVD with the sock puppet in it (what the???), now I send the kids to the folder they can quickly and easily find the DVD they want and it is super easy to put the DVDs away rather than letting them pile up on top of the DVD player collecting dust and scratches……… so Shannon, thank you, thank you, thank you :)

Ok now onto my Works for me Wednesday post:

In my endeavour to find anything to make my life easier, I found a great tip to save time when preparing kids lunchboxes.

I make up a loaf (or two) worth of sandwiches, wrap each sandwich individually and put them in the freezer. Then each night I grab out whatever I need for the following day and put them straight into the lunchboxes. It sure helps when you are in a rush to get out the door in the morning.

Some sandwich fillings that freeze well are:

  • Sliced or shaved cold meats and poultry
  • Peanut butter
  • Cheese spreads
  • Processed cheese
  • Cooked egg yolk

A handy hint: Butter or margarine helps to prevent whatever filling you choose to use (like mayonnaise or salad dressing) from soaking into the bread.

What you can’t freeze:

  • Hard boiled egg whites, they become tough and often develop off-flavors when frozen.
  • Lettuce, tomatoes, carrots and other raw vegetables lose crispness and color.
  • Sliced natural cheese becomes crumbly, but you may not mind this.

Caitlin’s 1st Day of School

The day has finally arrived!. Caitie has been counting down the days since Christmas. She has been so excited to be finally joining her big sisters and going to big school.

She couldn’t wait to put her uniform on this morning. The moment she got out of bed she wanted to get dressed :)

There are a few familiar faces in her class in particular Chloe’s best friend’s little brother, so that is always a good start.

There were no tears which always makes it easier. I didn’t feel upset at all, but if she had of started crying my pregnancy hormones would have kicked in and I would have been a babbling mess, so thanks Caitie for not making Mummy cry :)

Getting Ready for Tomorrow update!

It is the girls first day of school for the year today and this morning went really smoothly :)

As I had planned to do, I got all the families clothes ready, made lunches and put them in the fridge and had the girls pack their school bags last night.

And as I had suspected it was pretty tough to drag myself up and get things down when all I wanted to do was lay on the couch and rest my aching feet and very heavy belly, but I did it!

I had a thought while I was waddling around the house thinking about just how heavy my belly was feeling. I have decided to try making the lunches while I am preparing dinner. I’m in the kitchen anyway, usually standing around waiting for the next thing to do, so why not kill two birds with one stone. I’ll give it a go tonight and see if it’s manageable or if I’m just kidding myself :)
